Ingredients
Dough
- 100 g active sourdough starter (100% hydration, fed 4–8 hours earlier and bubbly)
- 350 g warm water (about 85–90°F / 30–32°C)
- 30 g honey or sugar (helps with browning & softness)
- 500 g bread flour (high protein 12–13% for best rise)
- 10 g fine sea salt
- 30 g unsalted butter, softened (or neutral oil for dairy-free)
Optional Topping
- 1 Tbsp melted butter or milk wash for golden crust
- Sesame seeds, oats, or everything bagel seasoning (optional)
Instructions
Step 1: Mix the Dough (Autolyse + Mix)
In a large bowl, combine active starter, warm water, and honey → stir until starter mostly dissolves. Add flour → mix with a wooden spoon or dough whisk until no dry flour remains (shaggy dough). Cover and let rest 30–60 minutes (autolyse helps gluten develop). After rest, add salt + softened butter → knead by hand 8–10 minutes or stand mixer 5–7 minutes until smooth and elastic (windowpane test optional).
Step 2: Bulk Fermentation
Cover dough → let rise at room temperature (70–75°F / 21–24°C) for 4–6 hours until doubled in size, airy, and jiggly. Do 2–3 stretch & folds every 45–60 minutes during first 2 hours if desired (helps strength).
Step 3: Shape the Loaf
Gently turn dough onto lightly floured surface → shape into a tight log: fold sides in → roll into cylinder → pinch seam. Place seam-side down in greased 9×5 inch loaf pan (or lined with parchment).
Step 4: Final Proof
Cover loosely → let rise 2–4 hours until dough crests ½–1 inch above pan rim (finger poke test: slow spring back). Tip: In cooler kitchens, proof in turned-off oven with light on or near a warm spot.
Step 5: Bake
Preheat oven to 375°F (190°C) → place rack in middle. Optional: Brush top with melted butter or milk → sprinkle seeds. Bake 35–40 minutes until deep golden and internal temp reaches 190–200°F (88–93°C). If browning too fast, tent with foil after 25 minutes.
Step 6: Cool & Slice
Cool in pan 10 minutes → turn out onto rack → cool completely (2+ hours) before slicing. Slice with serrated knife for perfect sandwich slices.
